I have recently bought an Acer Nitro 5 AN515-55 and have found that my earphone mic isn't detected/doesn't work. I have tested it on my phone and old laptop so I know the problem isn't the earphone itself. They are some generic earphones bought cheaply on Amazon. I can hear audio through them fine, it's just that the mic the laptop uses is the in-built one called 'Microphone Array (Realtek(R) Audio).
I have enabled the microphone usage in privacy settings, reinstalled the driver, uninstalled the earphones from device manager, tried it with Realktek HD audio manager, but nothing seems to work.
The current driver is Realtek(R) Audio (version 6.0.8981.1)

I have also updated everything, windows versions is 2004.

Open the Realtek Audio console click on device advanced  settings in the connector re-tasking choose Headset and it should work. The only issue is that you should do that every time you want to use your headset mic.

I had a different driver that didn't have the console on my old laptop, but it did work on it and my phone.
I do have a USB-C adapter to use my earphones on my phone, is it possible to use that on the laptop?

You could try but I doubt. What is the headset model?

Could you boot into Linux Live Distribution to verify or exclude HW problem with the port?

Do you have a choice to set the microphone connected by 3.5mm jack as default microphone?

You need to download Linux Live distribution to boot from it but  you don`t need to install it.  Download for example this LINK  after that download Rufus and make a bootable USB drive by  selecting the image you have downloaded and by choosing GPT and UEFI- non CSM. When ready reboot and boot from the USB and when asked choose "try Ubuntu".  The OS will load and you can check the sound icon if you are able to choose headset mic. Make a test if it works and report back

The only options I have is microphone array and stereo mix. Stereo mix doesn't do anything when enabled.

It seems that Acer will bundle your headset's microphone with the Realtek Microphone Array.

So lightly tap on your headset's microphone to see if the signal meter jumps. Then increase/decrease mic boost and mic levels.

It seems that is true. It's kind of a shame because people on discord, for example, may hear the clicks on my mouse or keyboard presses when it wasn't the case before. I guess I could change the sensitivity and hopefully it won't be too annoying. Thanks for the help.

I finally solved my mic issue, it's not perfect but it works.

Go to Control Panel > Hardware and Sound > HD Audio Manager(I have Realtek HD Audio drivers), double click on Analog button and set current device to headset. Now all the apps will use the headset's mic but it will still not show up in Playback and Recording devices. I hope somebody will find this helpful.
