Sorry @maclane and @MCR for posting on an Answered thread.  Here's a follow-up in a new thread, which may or may not be useful for others fighting with Acer's with 32GB emmc (and also appreciate that this is a couple of years late for most people!)
The initial excellent thread on this subject is
https://community.acer.com/en/discussion/589366/is-it-possible-to-change-the-hard-drive-on-the-es1-332
So that thread highlighted the 332 as having room for a 2.5 hard disk (ssd - hooray! and service hatch!) but needed a cable to connect it to the motherboard (boo).  Bought these and installed and imaged emmc to ssd no problem, but couldn't get the ssd to boot (no option to turn off UEFI in BIOS although could turn off secure boot **which may have been useful in the end or not I cannot remember**).

The fix -may be obvious to some- was to boot from a Windows10 install USB which boots by default (guess this is a BIOS default) or from F12 menu if you prefer to use it).   Then install to the SSD and this magically gives a dual-boot system (ssd defaulted, emmc second option).  Turning the delay time down to 0seconds make the ssd boot without the dual-boot menu.

The result is an excellent cheap but usable laptop.  Thanks Acer!
