Model: Acer Helios 300 PH315-53 (2020) Just over a week old and I've noticed the left fan has lower rpm than the right, aren't both fans supposed to run at 6000rpm? Should I have this checked at a service center? Btw the attached picture is the consistent readings I have been getting for 3 days now whenever I test it in max fan settings.

Yes, max fan RPM will be same
Did you check if CPU rpm is also lower when playing games or running benchmark?
If yes, then go to service centre for fan replacement

I got my Helios 300  (2020 model) the other day and I am noticing the same with my labtop as well. I am getting similar rpm numbers on max setting, I haven't done anything with the pc yet in terms of undervolting or anything else.

I have a 2020 Helios 300 as well and mine gives the exact rpm numbers as yours. I think its software locked to this rpm as when I block the left vent (cpu vent) with my hand the rpm goes above 5000. You can try it on yours to check this but just don't keep it on there for too long.

There is nothing wrong with this RPM you getting as GPU's fan are mostly faster than CPU's. But yes this 2020 have lower CPU fan RPM than 2019 model(CPU max RPM around 5900 and similar GPU fan RPM) that could be to reduce the fan noise.
