Acer Nitro 7 (AN715-51) RAM Upgrade Details

Hey,
I've recently thought about upgrading the amount of memory in my laptop. It should be a pretty simple process to actually install but I would like to know more information about what RAM I can actually install. I know the max recommended is 32gb. Right now, I have an 8gb RAM stick right now, and I would like to possibly add a 16gb stick. I'm not sure exactly how RAM works. I think it is fine to mix an 8gb stick and a 16gb stick but I read that RAM is only as fast as its slowest member (the 8gb stick). Do 2 RAM sticks operate together as 24gb or is this true? Will adding a 16gb stick actually help? I could also replace the 8gb stick, but that brings me to my next question: are there ramifications to taking out a stick you have been using and replacing it? The laptop would obviously be powered off, so the RAM stick wouldn't be in use, but I'm not sure if RAM gets any impression or data from use or if it is completely temporary for processes you're running.

Lastly, I've found some RAM sticks that I believe match the system, from either Kingston or Crucial.

Most likely I will buy a 16gb stick and replace the 8gb stick if possible.
