Unable to use Google Assistant on Acer Chromebook Spin 311 R721T

Trying to follow Google's guidance for it's pixelbook in order to enable Google Assistant on our Acer Chromebook Spin 311 R721T

Select the time at the bottom right.
Select Settings Settings.
Under “Search and Assistant”, select Google Assistant.
Select Google Assistant settings.
Under “Devices”, select Chromebook.
Next to “Access with Voice Match”, tap the toggle to turn voice recognition on or off.

However, at that final step, after selecting the Chromebook, I get no "Access with Voice Match" option.

The microphone on the chromebook works ok and I can perform google searches by clicking on the microphone icon first, but the device fails to respond to "Ok Google" or "Hey Google"

     Nope, just Chromebook

    Set up the Google Assistant
    In the bottom right, select the time. Select Settings.
    1. Under "Search and Assistant," select Google Assistant.
    2. Tap the toggle to "On."
    3. Tap the toggles to turn on any of these features: ...
    4. To update additional settings for your Google Assistant, select Google Assistant settings.
