I think it would fit, but what about the GPU psu cables? I think the 3070 uses 6pins + 8pins one

the 7800xt uses 8pin + 8pin, what would I need to purchase or add or modify in order for the 7800xt to work?

The 7800XT has a power requirement of 700W and your PO3-640 only has a 500W supply. Your system is designed around an ATX12VO power supply, and it's really tough to fond those larger than 500W. You might be able to use an old style ATX supply, if it has a big enough 12V rail, with some creating cabling to adapt the 24 pin connector to the 6 pin used on your system.

Does that mean that I can't install it in my System?

I'd underclock it, but would that cause any problems?

If you install it and it works at all, it is likely to be flaky every time you run it harder than at just an idle.
