When I put back in the default ram, the machine boots up normally.

If you want RAM to run in Dual Channel mode then make sure
Both RAM modules are equal in size
Both RAM modules to be of equal voltage
Both RAM modules have the same CL (Cas Latency), check the CL of the original DDR4
Both RAM modules to have equal Rank is preferred (check original DDR4 and buy same)
Up to 32GB total, 2666mhz DDR4 ram modules is supported, not 4800 MHz.

The RAM is DDR 5 and yes both sticks are exactly the same

    16GB DDR5-4800

    CL40

    1.1V

Which exact Predator Helios 300 do you have? Is it the new 13th Gen RTX40XX model as the new Helios laptops all work on DDR5-4800MHz if its the older model then DDR5-4800Mhz will not work. If its the Predator PHN16-71 this is the memory specs for this laptop:

For a 32GB capacity you need the 2x 16GB of the below ram modules that Acer lists in this laptops SG:

This is the MICRON DDR5-4800 MT/s Part Numbers and Timing Parameters – 16GB Modules ram specs, which the Crucial that you have should match exactly, if not then it won't work.
