There appear to be a couple of these available on eBay, but I'm not sure if they are compatible with my Acer Aspire 51G

Do you mean the 2.5 inch adapter cable (10 HDD CABLE 50.GP4N2.004)?

Found the answer elsewhere. However, now I'm trying to figure out why BIOS will not hold my boot priority change. Trying to boot from a USB flash drive.

First lately I have been buying Acer SSDs(plug) for UEFI systems. Legacy should be plug and play
Second the major SSDs (not all, check) include branded copy/clone software you can download. For Acer this is downloaded from acerstorage.com (undocumented). A cloned disk will be bootable and will already be in the BIOS directory.
Third To make bootable on your own (this should be in a FAQ) you will need to format UEFI/NTFS and GPT can use either Rufus or Gparted.
Finally this should put a UEFI partition on the disk. To make it bootable you will need to add the boot64x.efi file to the bios directory under "security". Just goo through the dropdowns untild you find it on the new disk.
