I have Predator 3000 PO3 620 model (i7 10700k, RTX 3070, 512SSD & 1TB HDD), I'm wanting to increase my SSD storage but not overly keen on replacing the M2 SSD as that contains the OS and is it really worth upgrading to only 1TB maximum as per the specifications for my model? Thinking of fitting a Samsung 2TB SATA SSD to complement or replace the 1TB HDD to speed up game time loading.
Any thoughts or reccomentdations? Best 2TB SATA SSD? Is there room to use both SATA slots or just replace the HDD?
Bios issues or will that sort itself out on startup?

You don't have a 1TB maximum, that's only the sizes Acer chose to ship with various SKUs. You can put in whatever size SSD in the M.2 slot that you can afford. The current limit to the M.2 2280 format is an 8TB drive, but it's not cheap. :)
You have two drive bays that can each hold a 2.5" or 3.5" drive. You will want to pick up a SATA data cable to add a second drive in there, and you'll want to have the power cable for that drive as well. IIRC your SKU shipped with one power cable installed (for the ODD and HDD) and a second on somewhere in the packing. It's possible though that they don't include that second cable in the box. If not you are looking for Acer part number: 50.E1ZD1.002.

If I change the M2 SSD to a 2TB (looking at a Samsung 980 PRO) whats the best and easiest way to swap over the contents on the original SSD including OS?
And will the system utilise the 7000MB/s read speed or is the slower 3500MB/s more suited?

The 3500MB/s is what you'll see, since the M.2 slot is an NVMe x4. What I'd do for the swap is pick up an external NVMe case first. Then plug the new drive into the case and plug the case into one of your USB ports (the faster the port the better). Use any of the cloning packages (IIRC I used Easeus last time, but it might have been Macrium Reflect) to clone the old drive to the new one. Make sure the only partition that is resized is the system partition. The EFI and Recovery partitions should stay the same size. When the cloning is done verify in Disk Management that everything is there and the sizes are still right then shut down, swap drives and boot back up. Once you are comfortable that the new drive is working correctly you can plug the external case back in and use Disk Management to wipe it and create a single data partition. You'll then have an external drive to use for whatever...

For cloning Samsung drives I have used Samsung's own Data Migration tool.

If you have a friend that has two or three M.2 slots on their motherboard, I'd visit them and clone the OS drive there. But getting an external enclosure can be very handy. I personally use Asus ROG STRIX ARION external enclosure and it's built like a tank!
