I'm experiencing an issue where my screens suddenly turn off and the fans ramp up, but the audio from my game continues to play. This only happens when playing high-quality games. Previously, my CPU reached 90°C, so I replaced the CPU cooler, and now it stays around 72°C when the issue occurs. My GPU temperature is between 50 and 60°C. Since my CPU is no longer overheating, I don’t think that's the cause. What could be causing this problem?

It could be the gpu or the actual NVidia driver, first uninstall the GPU driver completely with DUU uninstaller and do that in safe mode and then reinstall the NVidia appropriate driver for your gpu and install the NVidia GeForce Experience software and play these high end games through this software and its settings for your NVidia gpu. If the driver update doesn't help, take the gpu out and clen its pins and the x16 gpu mobo slot pins and if that doesn't do anything, then do a CMOS reset and take the bios battery out which reseats the desktop, as a last step if all the above don't work, then its either the gpu or the mobo that are faulty, so narrow it is down. Good luck.

This where the bios battery is and how to do a CMOS reset for the PO3-630 desktop.
