Hey! I have an Acer predator Orion 3000 620 RTX 3070 in my pc, but the fans are extremely loud, and I think it's making the gpu more inefficient. I have to undervolt the gpu to around 78 degrees, once the gpu reaches 80 degrees, the fans spin at max speed, ignoring any fan curve, until it crashes the entire system.

The gpu is the only source of noise in my pc. I would like it silent.

So, I would like to change my gpu fans. But there appears to be some form of torx screw on the heatsink, which no guide seems to have. Has anyone else, changed their fans, please let me know.

It sounds like you might have other issues leading to the fans running at a high speed. Replacing the fans might quiet it some, but dealing with the overheating issue is likely a better next step. Maybe the thermal compound isn't good?
