Acer does not specify gpu chip thermal paste or vram thermal pad types and thicknesses and/or how to change these components to the Nitro Radeon RX7800XT OC 16GB gpu card, as this is a specialist job that should only be done by Acer Tech Support. As the purpose of thermal paste and thermal pads is to shield and dissipate the heat from the gpu chip and vram chips equally and most efficiently.

The only way that you can achieve this is to have adequate and equal amounts of paste on the gpu chip and adequate thickness thermal pads on the vram chips so that when the thermal module is secured to the gpu chip and the vram chips it makes equal contact with the gpu and the vram chips so that maximum heat is dissipated and cools the gpu card for ultimate performance, that is why this job should be done by an expert technician that knows what he /she is doing, so I don’t recommend that you do it yourself.

If you want to do this job yourself, you do so at your own risk as if you do this wrongly, you could damage the gpu card and I take no responsibility for suggesting these products here that I've used and they are excellent and very high quality, Use only the highest grade product like the Thermal Grizzly Kryonaut Extreme is a high performance paste (Don't use liquid metal as Acer does not use LM paste on gpu's) for the gpu chip and use their high grade Minus Pad Extreme which come in two sizes of 120x20mm and 100x100mm @ thicknesses of 0.5.1.0.1.5,2.0 and 3.0mm, which will give you ample flexibility to build uo the thermal pads for appropriate application to your Nitro Radeon RX7800XT OC 16GB gpu card. Good luck and hope this helps you out.
