I would like to upgrade the RAM on my Acer Aspire 5 A515-56-543Q (NX.A1HEU.00K). As far as I know, the maximum supported size is 8GB + 16GB. What would be more beneficial for improved productivity: sticking with 8GB + 8GB in dual channel or switching to 8GB + 16GB? Thank you!

You have either 4GB or 8GB onboard memory and a slot for removable memory, if you have 4GB onboard memory you can install up to 16GB RAM in removable RAM slot to make the total memory of 20GB if 8GB soldered you can upgrade to 24GB but 2x8GB is the recommended RAM (16GB) as that will run in Dual Channel mode at 2667MHz, 8+16GB (24GB) will run in much slower 1300 MHz Single Channel mode. If you decide to go Dual Channel Mode you have to copy the soldered RAM module, Run this command in the Command Prompt opened as administrator: wmic memorychip list full and note down the part number, buy exactly the same module, Brand, speed, CL and rank for best reults.
