How to extend to 2 external monitors to an AN515-55?

I have recently aquired a second monitor and have been trying to connect it to my laptop for a while now to no avail. My laptop has one hdmi port, a USB-C port (not thunderbolt), 3 USB-3 ports and the typical ethernet and charging port. Here's what I've tried:

HDMI splitter from the HDMI port. Virtually impossible to find one online that would allow you to output 2 video signals. The one I bought did not allow for that and would actually only allow me to output to one monitor at a time. Also I think the laptop will only output one video signal from the HDMI port (although I could be wrong).

USBC to HDMI converter. My USBC port is not thunderbolt so it just would not detect the monitor connected to it (had one connected through HDMI and the other through the USBC to HDMI).

USB3 to HDMI converter (twice). The first one I bought only supported up to windows 10 so I did a fresh install of windows 10. It sort of worked but I could not extend to all 3 monitors for more than a couple of seconds (kept glitching and recognising the monitor connected via the adapter then not recognising it). What I could do is have a duplicate screen on my laptop and the monitor connected via HDMI and then a different screen on the monitor connected via the adapter. The adapter did work fine on its own (i.e. I could use it when there was not monitor connected to the direct HDMI). I tried reinstalling the driver several times. Then I bought another one that allowed windows 11, did a fresh install of windows 11, same problem.

Then I tried (with some stuff at school) a Startech usb3 docking station. Laptop refused to recognise any monitors connected to said docking station even when only one monitor was connected.

I've updated my graphics drivers, restarted my laptop maybe 20 times, called the helpdesk and read through loads of forum posts. I just can't find a solution. Both monitors work absolutely fine on their own or when connected with the USB3 to HDMI adapter. They just don't extend when both are connected (one through HDMI and the other through the adapter).
