Hello. I have an Orion 5000 PO5-625s. In the bios there are various silent standard performance fan settings and you can also set the curve yourself. Has anyone checked the settings? I've noticed that the fan turns on and off quite a bit from time to time

The signs of fans coming on intermittently for a desktop cpu is because the cpu is not being cooled properly and its overheating, I know that your PO5-625s has a water-cooled single fan system but it might be that it needs upgrading as the bios settings will only make the existing fans work harder and noisier. Update the Cooler Master CPU Liquid Cooler to either a twin fan setup if it fits or use the excellent Noctua NH-U9S chromax.black as that is what allot of community members have done to previous PO3 and PO5 desktops as this dry CPU cooler has provisions for adding another fan so that its a twin fan CPU cooler that will be allot more efficient than your oem water cooled cpu cooler.

Before going through the effort and expense of a new cooling system, be aware that over time the thermal paste can dry out, giving poorer conductivity for heat. Just cleaning the old paste off and putting new one will often get you back to normal for a heck of a lot less cost. Also, even water cooled system do build up gunk over time, so cleaning the cooling fins can make a big difference.
