The reason why you are getting "the speed caps at 2133mhz"when you fitted DDR4-3600MHz is because this ram is not compatible and mixing two different ram module speeds and specs gives you this speed, as the memory when mixed with two different modules, always runs at the lowest module speeds. This is the Acer specified N50-620 ram:

The Nitro N50-620 desktop can only run on standard ram max DDR4-3200MHz CL22 and the appropriate and cheapest way to upgrade to 16GB is to add another and exact spec thta Acer has fitted to your desktop like the 1x 8GB DDR4 ram module that you have (don't MIX a DDR4-2666 with a DDR4-3200 or a DDR4-3600MHz modules) as that is why you will get the 2133MHz total speed.

The best spec ram to upgrade to is to buy the Acer oem listed ram modules listed above or a matching pair of a 16GB KIT that its specs are at 2x 8GB DDR4-3200 • CL=22 • NON-ECC • UDIMM • 288-pin • 1.2V • 2Rx8/1Rx8/1Rx16 • PC4-25600 or even better is to buy a matching pair of a 32GB KIT at 2x 16GB DDR4-3200 • CL=22 • NON-ECC • UDIMM • 288-pin • 1.2V • 2Rx8 • PC4-25600 specs, as all these combination in 2x module forms will also run in Dual Channel which is the best memory combination for gaming and editing, as its faster .

Yes, there is no XMP support with the Nitro N50-620 models.
