Thinking of upgrading my RAM since I only have 8 gigs of RAM currently, I was thinking of getting this: https://www.amazon.com/Acer-2666MHz-Laptop-SO-DIMM-Computer/dp/B092XXR43F/ But would it really work? If not any advice or suggestions?

Here's as well the specs of the SPD and the Memory.

No that Acer ram from Amazon will not be a matching pair and will reduce your ram to run at DDR4-2666MHz and not at its OEM DDR4-3200MHz so don’t buy this ram. Buy and match the existing ram that you have from Micron Tech and match the exact part number that your OEM 8GB has and is shown in CPUz which is the Part No: 4ATF1G64HZ-3G2E1 at DDR4-3200 (1600MHz) CL 21 ONLY (look this ram up on eBay or any other site if its available as a new or used ram module?) or search for DDR4-3200MHz CL21 as they will have the same timings table which you have to match like you OEM ram has.

As doing the above, will give you the best performance and matched pair (like a kit of 2x DDR4-3200Mhz ram matching pair) for your laptop. If you want to increase this laptops ram capacity to its max 32GB total 2x 16GB then look at the AN515-52 Crucial System Scan it will tell you all the memory as it won’t tell you any M.2 drives upgrades (as Crucial has M.2 drives available but I don’t know why they don’t?) it will also tell you all the memory combo upgrades into your laptops which has 2 (2 banks of 1 spots) that your laptop came with 8GB removable OEM ram.

Btw, the Crucial Scan suggested their top ram spec of max 32GB of their Crucial Ballistix SODIMM 32GB Kit (2 x 16GB) DDR4-2666 Gaming Memory (Black)

NO don't get that as that ram is even worse, as that ddr4-2400mh will make your memory run at 2400mhz, read what i've said above as that is the best and top option for an upgrade, unless your budget is limited but buying 2x dd4-2400 ram will give you dual channel but with a laptop like you have 16gb ram is allot better than 8gb . If you update with 1x 8gb ddr4-3200mhz ram your task manager memory is going to look like the caption below
