Problem with GPU performances on my Nitro 5

Hello there, 
I've just bought a Nitro 5 with Ryzen 9-5900HX and a 3080 GPU, 32 RAM and everything looks good and smooth. Everything but the GPU performances.
I'm no expert but the GPU is acting strange during gaming session and is never stable at 100%. Don't think is a temperature problem as the CPU and GPU i guess looks ok (check the pics). 
Note that the first days i tryed in balanced mode and it was ok, but now with the same games, in high performance mode it looks weird to me.
Maybe i'm overthinking but what could it be?

    When on High Performance Settings, the GPU works every second, the GPU then will run hot (the Spikes) and will try to make some adjustment until it cools itself--throttles so to speak until it finds a "suitable" frequency (the plateau) that it will run at a stable clock.

    What do you mean by acting strange? 

    Can you put a Picture of your Nitrosense while gaming?

    If that picture above is "while your gaming" then I guessed you have a very good airflow.

    Yes the pictures above are while gaming... my concern is most on the second picture. The first one, on a balanced mode, the GPU works at 100% with no issues.
    As i wrote above, maybe i'm overthinking and there's no problem at all, but I just can't figure out why a couple of days later in high performances, the GPU is going up and down in that way.
