Can't load UEFI on Acer Nitro 5 after updating Pop!_OS installation

I currently have a dual-boot installation set up on my AN515-55, with both the Windows 10 that the laptop came stock with and Pop!_OS, an Ubuntu-based Linux distro.
If I try to open the UEFI using f2, it just freezes on the Acer logo screen.
I ran into this issue before when I first installed Linux, and deleting grubx64.efi resolved the issue then, but now there is no grubx64.efi in the EFI partition for me to delete. I don't see any files when I open /boot/efi/EFI/BOOT
I currently have both Secure Boot and Fast Boot disabled, as well as the f12 boot menu, so thankfully that works.
I know the latest version of Pop!_OS uses rEFInd rather than GRUB. would deleting refind_x64.efi resolve this issue? And what would be a good permanent solution so this doesn't break every 6 months when a new version of Pop!_OS comes out?
It also switched back to using my Windows 10 partition as the default boot option rather than my Linux partition, so a permanent solution to that issue would also be helpful.

    Update: deleting refind_x64.efi did resolve the issue. I'm still wondering if anyone has a more permanent solution though.
