For anyone wondering, I've found the solution.

The acer nitro 5 has a USB 3.0 port on the left side so i ordered a USB 3.0 docking station with a HDMI input.

all 3 screens (including laptop screen) works now and they all extend and not mirror
You don't happen to have a tutorial video on this do you? I have the 2 monitors but they came with VGA cables. So I, being a TOTAL novice, am trying to figure out which cables I need in addition to this converter. Also, even still images of the set up would be great. I think I have the same Nitro 5 as you (AN517-52 with a GeForce 8). I really need the 2 screens for work, but if I can add that laptop screen for gaming that would be wonderful! So any visual aids for this would be really helpful.

If your monitors only have VGA you'll have to jump through a couple of hoops. You can connect one to your HDMI port with an HDMI to VGA adapter like this. That one was just first on the list Amazon gave me for "HDMI to VGA Adapter". For the second monitor you need a USB dock with VGA, like this one. That wasn't the top of the list, but it was quite a bit cheaper than what was there when I searched for "USB to VGA Adapter", and it was a lot less than the full blown docks...

I have managed to get the 2 externals working with the converter mentioned in the linked thread. (The monitors have multiple port options, but only came with the VGA cables. I just bought 2 HDMI cables to get it working.) The issue I have now is just the lack of usb ports. Due to carpal tunnel I need a special keyboard and mouse. I have tried adding the keyboard in my 1 remaining port and the dongle for the mouse to the converts extra USB port. This causes an issue for the mouse. It just randomly disconnects. I can only assume this is due to the amount of "energy" or data, memory or whatever to keep the monitor going. I have thought about getting another USB splitter, but I am unsure if this will work to run both the mouse and the keyboard off of at the same time. Any thoughts here?

Time for a USB hub, that turns one port into several.
