Hello! OP here. I ended up buying the 2021 model of the Helios 300 with i7-11800H & RTX 3060. I bought the following MST Hub & can confirm that it works fine. The laptop can support 4 displays at the same time through the MST Hub, or 3 displays using the MST Hub + 1 display using the laptop's HDMI port. The latter is how I use:
You can buy the one I linked to in my OP which has 3 HDMI ports, or the one I just mentioned in this post, which has 4 DisplayPorts - both would work fine. Also, if for some reason you need even more displays connected to your laptop, you can make use of the Thunderbolt 4 port and connect 4 additional displays:
I have 8 displays connected to my Helios 300 at the same time using the 2 aforementioned products. Everything is running smoothly. Laptops with a Mini DisplayPort + 1 or 2 Thunderbolt 4 displays are very powerful machines.
