Missing Applications & 2 Ubuntu Boot Options - Acer Aspire 5 (A515-54G-54QQ)

Last week, I installed Ubuntu on Acer Aspire 5 (A515-54G-54QQ). It is setup as a dual boot with Windows 10. This is my 1st experience with Linux. 

There are two issues and I am not sure if they are related, so i am mentioning both. 

1) I installed and configured Express VPN, Chrome, and a few other applications. When I logged in 2 days later, all of the programs were gone. I tried searching and everything was non-existent. I tried the same steps on both Ubuntu options that were available under the Boot Manager. It appears Ubuntu defaulted back to default. I am apprehensive setting up everything again, and having it disappear.

2) When I go to boot menu, there are 2 options for Ubuntu. Ubuntu and grub64efi. Both appear identical. Do I need to remove one?

    With regards 1): never had this issue before. Linux versions do not have a reset functionality. Sounds like something went wrong during Linux installation

    With regards 2): I assume this is the BIOS boot menu. It sounds that you have made 2 Linux installations, as the BIOS has seen 2 ubuntu directories in the EFI partition.

    May I ask the following:
    - what is the Linux version you have installed, e.g. Ubuntu, Linux mint etc
    - did you use a secure boot, as this is the safest method

    If you want and can start from scratch again, I would advice you to choose for a Linux version which has a lot of users and supports secure boot for a long time.

    I have very good experience with Ubuntu, you can choose for the Long Term Support (LTS) version 18.04 and choose for any flavour - Mate, Gnome, kubuntu, lubuntu, budgie etc. Make sure you choose the 64-bit version of the ISO.

    I tried installing ubuntu and it says disable rst and have done all the steps mentioned on ubuntu community to dual boot but i am not able to dual boot. Can you please mention steps as in how you were successful in dual booting ubuntu alongside windows 10?
