I got this Acer Nitro 5 about 2 days ago and I cannot figure out how to force this laptop to use the dedicated RX560X GPU. Please help

This should happen automatically when gaming, when not gaming it will use the integrated video. Are you having problems gaming?

It doesn't happen automatically, I can't even run mine craft on the lowest settings over 10 fps because it uses the Integrated Graphics

I've seen this video, I don't have that version of AMD Radeon Software, I think I have a newer version and I have no idea how to boost Minecraft as it doesnt show up in any file locations

Did you also look under the Gaming Tab / Performance tab? Or the setting cog wheel second option from right top?

This thread again goes back to the old AMD software. We need instructions using the NEW AMD software.

Well, you can't switch to dGPU if you're using the latest driver from AMD, especially for OpenGL-based games (eg: Minecraft). It might be due to some bugs in the driver. To gain back that switching capibilities, you'll have to install the driver on Acer websites, (you may not like it when it's not the latest driver, but you don't have other choice   :/ )
PS: You can use Linux to have the latest driver while being able to switch GPU
