    Good afternoon trevord !

That laptop uses an Intel Atom-based N4200 SoC from the Apollo Lake series which means that you cannot use a generic Ubuntu amd64 or i386 .iso file due to the locked-down UEFI firmware which expects an EFI executable.Unfortunately, Ubuntu still uses the old style grub2 bootloader (instead of a pure EFI-based solution such as efistub or systemd-boot) so you will need to ‘respin’ the Ubuntu ISO before creating your bootable media/usb. This will replace Grub2 with an EFI boot manager which will allow the system to boot using the iso file and load the kernel directly without using any bootloader. For the guide, check out this link:Running and installing Ubuntu and Ubuntu flavours on Apollo Lake devicesNote that you won’t be able to use grub2 or any other legacy bootloader on those devices. Attempting to reinstall grub2 will make the installation unbootable.
