No main boot device recognised, but can boot with an Unbuntu USB, but not Windows. argh.

Fellow Acerians.

I have a Acer Spin 15, v1.1 BIOS.

A few days ago it it didn't recognise any boot device - normally Windows 10 on an M.2 SSD

I swapped the disk but same message - Blue dialog with "Default Boot device Missing or Not failed, insert recovery media, then drive boot Manager.

I tried switching between secure boot, resetting to factory bios settings, removing  motherboard battery - all no difference

They peculiar thing is this...
An Ubuntu 18 USB boot is recognised (FAT32) - I can boot live and install Ubuntu to M2 SSD but on reboot I get the same as above.

A Windows USB boot disk (NTFS) is not recognised.

It's like BIOS is no longer recognising anything except FAT disks.
Has anyone encountered this? I'd like to try a bios update, but I read that it needs Windows.

Any suggestions are much appreciated, I'm stumped.

    What exact model of your laptop?
    Are you trying to install on an SSD?
    Already converted to GPT?
    Which iSOs are you using on the pendrive are x64 bits?
    Did you create the pendrive with UEFi support in GPT format?
    Did you disable SecureBoot?
    Is the HDD or SSD recognized in Bios?
