I have an Acer A717-72-700J that came with 16GB of 2400 MHz memory. I have upgraded the memory to 32 GB of 2666 MHz. Everything is working fine except the 2666 memory is running at 2400. Is there a way to get it to clock the memory at 2666 since this is a listed supported memory speed for this computer?

Unfortunately, this memory is 2400MHz. It supports 2666MHz, but with overclocking/XMP profile. The laptop doesn't support memory overclocking, so you can't run it at 2666MHz. You can check Crucial's website for more information on the memory:

    https://uk.crucial.com/gbr/en/bls2k16g4s26bfsd

For example this is a memory that will work at 2666MHz for your device:
    https://www.amazon.co.uk/dp/B071H38422/ref=cm_sw_r_cp_apa_i_R4sNCb3KNXHFY
2666MHz on this module is the default speed, so it doesn't need to be overclocked in order to reach it.

XMP(extreme memory profile) is a pre-loaded overclock setting on the RAM's chip that is read and loaded by the BIOS when XMP is selected for the memory setting. Motherboards that support memory overclocking also support XMP or AMP(amd memory profile), which increases the voltage and frequency of the memory to make it work faster. Usually when you install RAM with XMP, it will work at the default clocks(2133MHz, 2400MHz, 2666MHz depending on the RAM) and in order to make it work at higher frequencies(from 2133 to 2666 or 2400-2666, like in your case), XMP has to be manually selected in the BIOS. As your device doesn't support memory overclocking/XMP, you can't run this profile or manually overclock the memory, therefore you are stuck at 2400MHz, which is the default frequency. If you bought a 2666MHz memory with 2133MHz default clock and 2666MHz XMP or even 3000MHz XMP, it would work at 2133MHz. A memory with default clock of 2666MHz will work at 2666MHz for your device, because it isn't achieved with XMP, like the one from the amazon link.

Helios 300 and Nitro 5 users DO NOT update the BIOS to version 1.22 if you don't want the keyboard's backlight to turn off after 30 seconds even when the device is plugged in.

What CPU is your system with? Have you just installed a 16GB 2666MHz module along with the pre-installed 16GB 2400MHz or you are using 2x16GB 2666MHz?

What application did you use to check the RAM frequency? Can you post a link to webpage where you ordered the RAM from or the RAM's model number?

Windows even lists it in Task Manager and other info windows as "2666 Memory", but several "System Information" programs like CPU-Z and intel XTU show it as running at 2400.

    Thanks for the help.

Different memory programs will show you different results because I have had this happen to me with Intel XTU and another program.  I bought and installed the EXACT SAME BALLISTIX RAM as you (https://www.newegg.com/ballistix-32gb-260-pin-ddr4-so-dimm/p/N82E16820164057?Item=N82E16820164057) and installed it on the EXACT SAME LAPTOP MODEL as you from Newegg.  All the programs I have indicate that the RAM CLOCK is running at 2666Mhz.  Just do not believe different programs with always giving you the correct info for your system.  If Task Manager is showing 2666Mhz then it is running at that.  Hope that helps.
