I would like to upgrade the RAM from 8GB  to 16 GB.
Please suggest best option by utilising the existing RAM if possible.
Currently its fitted with 2*4 GB RAM.
Fitting one 4G RAM and 16G (to make it 20G) of different specs or using 16G one stick alone, which is better ?

Laptop spec:

Model - Helios 300 PH315-51- 510T
OS- Windows 10 Home
Slots - 2

My preference is :

Kingston HyperX Impact 16GB 2666MHz DDR4 CL15 SODIMM RAM.
Also needs help to confirm whether this will be compatible with the model.

YC hi and no its not better at all do not mix ram you should be working in dual channel if you want 16gb ram get 2x8gb if you want 32gb get 2x16gb make sure its always 2 sodimms same size/clock/cl and preferably brand and yes hyperx 2666 its compatible (check my signature) my advice in your case as you have 2x4gb dual channel sell your 8gb to someone (or keep them its up to you ) and get 2x8gb dual channel ready set do not mix sodimms from different sizes you will see a decrease in performance as its not working in dual channel at all
