Yes it does perform better in gaming, because of the higher single core frequency, but ryzen is better in multitasking because of the 2 extra cores. Currently games use mostly 4 cores, which means with ryzen you have 4 additional cores to take care of streaming and recording(the amount of strain that streaming puts on the CPU depends on the bitrate you planning to stream with, which means that with ryzen the quality of your streams can be better, as you can record with higher bandwidth), while the 8700k has only 2. Also, with a decent cooler you can easily surpass 4Ghz on the 2700X by overclocking.

Helios 300 and Nitro 5 users DO NOT update the BIOS to version 1.22 if you don't want the keyboard's backlight to turn off after 30 seconds even when the device is plugged in.

Still the same, except that with 8700k your pc will be more future proof regarding gaming. I assume that after you record a video you will also do some editing, which then involves rendering the video, which is almost CPU bound only. The video editing software takes advantage of all cores that a CPU has to provide, which means that 2700x will render your videos faster.
2700x- better for live streaming, recording and video editing
    8700k-slightly better for gaming

If you said you would only game on your system, then i7 8700k and gtx 1080 with no doubts, but as you plan to do streaming and recording, then 2700x is the better option in my opinion.

ryzen 2700x should be able to run most if not all games at 144fps and the 2 extra cores and 4 threads will give it an edge in streaming and recording compared to 8700k, which has only 12 threads, so it would be better to go for the 1080 ryzen 2 route, because with 1070 you might have to reduce the graphics in some titles in order to reach the 144 mark.

This is my opinion only, so you might want to do some research to validate this and decide for yourself and wait for someone else to give his opinion as well.
