What exact Nitro model laptop do you have, is it an old like AN515-xx-xxxx or a new ANV15-xx-xxxx as the NS has been changed to the new Nitro models, give us more details as NS is an accurate Acer software specially made for you Nitro laptop.

Accumulation of dirt, dust, or other contaminants on the sensor's surface can interfere with its operation and cause inaccurate readings or failure. Calibration issues: Improper calibration or drift over time can lead to inaccurate temperature measurements, affecting the sensor's performance. NitroSense fails at reading the peak core temperature because it is running at a lower Windows priority compared to ThrottleStop. The lower temperature numbers that NitroSense displays might make you feel good but they are not as accurate as the peak temperatures that ThrottleStop reports.
