Any hidden BIOS options to manually change shared VRAM  would be revealed in the BIOS MAIN or ADVANCED tabs by pressing Ctrl+S.  However, your model's original specsheet does not show any official Acer documented BIOS  modifications to do this. Sorry.

Sorry, shared VRAM is usually a fixed percentage of total installed RAM and not manually configurable.

Would be nice if a BIOS update was to add this feature, is there any chance Acer would listen and do so?

An Acer app like PredatorSense or NitroSense would be more likely. But don't hold your breath hoping for an AspireSense to appear anytime soon. 🙂

Well, it turns out there IS a way to do this, but there is no effect on performance since the iGPU can allocate as much system RAM as it wants. The default 512MB is just Reserved for video memory, and also allows games that check for the amount of VRAM to run.
