The above warning is written in red under Scale and layout in my display settings. It says 'Turn off custom scaling and sign out' in blue underneath this... can someone explain what any of this means and why it would be there? Should I turn off custom scaling? (bare in mind, I did not turn this on), and what would I be signing out of?

What is the scaling set to? I'm at 150% right now, which is one of the standard scalings. I believe the standard ones are 100, 125, 150, 200, etc..

incidentally, I would like to see more within the screen, (zoom out if you like). I presume this is to do with this setting?

That is correct. Use the Advanced scaling setting to remove the custom scale and try 150% or 200% instead.

Ah, when I click on the advanced setting it gives me a different option, which is currently set at 175, (see screenshot) & it suggests not to change this one as it may not be reversible. The other screenshot shows the standard display settings, where you can see it is set at 250% but unclickable (I presume because of this custom scale factor set?) have you not seen anything like this before?

Click on the Turn off Custom Scaling, which will sign you out. When you sign back in you will be able to change the standard scaling values. I'd suggest trying with 150% or 200%...

I did that. It automatically reset it to 200% (recommended) when signing back in, but this was even larger than 250% for some reason?! I have changed to 125%, seems good scale. Hopefully it stays, I have read however, many reports of this problem keep coming back on windows :/

If it keeps coming back try creating a new user profile and testing there. Your profile might be corrupted, and the scaling if just a symptom.
