Typically you select with a touchpad by moving the cursor to where you want to start with your right finger, the press and hold the left click with your left finger, while dragging to the end of the selection with your right. Once the selection is all highlighted you can use CTRL-C to copy, CTRL-V to paste and CTRL-X to cut and copy.

As to the wireless mouse question, sure you can use either a wired or wireless mouse on your Chromebook.
