Can I replace Acer Aspire ATC-705-UC52 HDD with a SSD Samsung 870 EVO, 2TB, 2.5", SATA III?

Yes, that should work fine. I'd connect both at once first, then clone the HDD to the SSD, then remove the HDD and boot from the SSD. Once you are assured everything works fine, plug the HDD back in and use Disk Management to remove all partitions and create one data partition on it.
