I have the Acer Swift 3 → SF314-512 model, and I've been having issues with my touchpad.

I've tried countless times to re-install / update the driver and nothing works. It's been going on for the past 9 months and sometimes the touchpad works, but it lasts for about 2 days before going back to the same issue. I don't know what else to do at this point. I would love it if someone could help me with this.

Are you still in warranty? Acer used two different touchpads on those models, an Elantech and a Synaptics:

In the case where the issue is with the drivers being corrupted, you can fully remove them (when doing the uninstall there's usually a check box to remove the files) and then reboot to force a reinstall. If that doesn't work, check to see which type yours is then try the same thing, except no reboot and install using the drivers from Acer's support site.

If drivers can't be fixed then the issue might just be hardware. First open the system up and verify the cable is connected well, likely best to reseat the connector several times in case it's been building up corrosion.

If that makes no change then the next step is to replace the touchpad itself. You can search on the part numbers from above to find a replacement… There are a couple of screws under the mylar that need to be removed:
