I have booted into the bios and selected ctl +s at the main screen but no option to change sata mode ever appears

I am running bios version 1.12

    @Dominicadairjones it is the VMD controller. Disable it, go to the safe mode, and restart again.

    The Main > SATA Mode > is an Option to determine how SATA controller(s) operate, the Option: RST with Optane or AHCI can be chnaged. See this guide Acer community blog here "Change SATA mode to AHCI - Acer Aspire 3 A315-54K-59NZ" or also get reference of "How to Enable AHCI Mode for SATA in BIOS without Reinstalling Windows" here, Also the BIOS > Main > Ctl+S should work, make sure that you are in the MAIN bios screen when you press Ctl+S.

    Ok i feel like im doing exactly what the directions are saying:
    Boot into windows > msconfig > enable safe boot> restart is forced
    hit f2 to bring me into bios > right arrow key once to get to main tab > press ctl+ s > only option that then appears is Touchpad: [I2c }
    left arrow one time left to get back to information tab > nothing different appears only options are
