Hello, I just purchased two (2) of the AN515-55-78ZE laptops with separate additional 8GB of RAM. I was planning to install the RAM myself. The retail store told me if I do it the warranty will be voided. Is this correct?

It would depend on your geographical location based on my understanding. In the North America region there are no labels or whatsoever to upgrade RAM. But in Asia Pacific I think they are labels on RAM cover screws. You might want to check with your retailer and have him change the RAM for you if that's the case.

Yes as sri369 has said, have a look at the base covers screws if they have any paint marks on them and if they don't, then have a look when you open the base cover and see if there are any stickers on the RAM restricting you? If there is, then you can't change the RAM which is like its said above. Btw, the 8GB RAM should be of the following specs for your AN515-55-78ZE and as suggested by Acer. Also and to get the specs of your fitted RAM install CPUz and have a look in their Memory and SPD sections for the specs of the fitted RAM as you must match both RAM modules for best performance and Dual Channel, also this laptop camewith twodifferent CPU types which are, the CPU's Comet Lake-H are either the I5-10300H or the I7-10750H and the Coffee Lake-H are the I5-9300H or the I7-9750H so fit the appropriate RAM and in the suggested combinations from the list below:
