Also see if SATA mode has changed to AHCI or can now be changed in existing BIOS version MAIN tab. Press CTRL+S again just in case it's hidden.

It's version 1.17 and nothing has changed.

OK. You currently have two choices. (1) Take the risk of trying to update the BIOS as @egydiocoelho suggested earlier to see if the SATA mode option appears. Version 1.20 seems to address this issue. (2) See if Mint will install dual boot in RAID mode after shrinking the Windows partition to make room for EXT4.

The advantage of dual boot, even if you mainly use Mint like I do, is that certain risky processes like BIOS updates are safer and easier to do from the Windows environment.

Thanks. Linux Mint 20.2 did install along side Windows 10. How risky is a BIOS update and do you know if there is any way to recover the BIOS if something goes wrong?

The risk of bricking, disabling or introducing adverse side effects is higher than device driver updates. And usually irreversible if something goes wrong. I can't recommend it on an otherwise functional dual boot machine.
