Aspire TC-895-UA92 came with 512gb M.2 SSD.

Does it have another open M.2 SSD slot?   (so I can add another M.2 SSD?)

Or is my only option to add another 2.5-inch SATA SSS via SATA cables?

Thanks for your help! :)

Only 1 NVMe slot. You can either swap out the old one or add an SATA SSD.

I believe the M.2 NVMe SSD came with TC-895-UA92 is a PCIe 3.0 x2 drive, you can still double the performance with a x4 one.
If you have an empty PCIe 3.0 x16 slot (without a dedicated graphics card) you can put a x4 M.2 NVMe SSD adapter(caddy) there for additional M.2 SSD. I did that and the new M.2 NVMe SSD is bootable from this x16 slot. If you use graphics card, you still can add 2.5" SATA SSD(s).

Just to confirm.  I just purchased the TC-895-UA92 (haven't received it yet).  I want to add an additional M.2 1 TB SSD for additional storage.  This shouldn't be a problem using a SSD adapter off the vacant PCIx16 slot?

If I wanted to go with a 2.5 SATA SSD install, is there a spare drive bay for the SSD, spare SATA connection on the MB and an extra power connection?

As long as the PCIe 3.0 x16 slot is still vacant, should not be a problem adding a M.2 NVMe SSD with adapter.
Once you receive your PC and open it up, the first thing you see should be the HDD tray ( the big piece, silver color metal plate).  Unmount it and you should see HDD1 and HDD2 imprints at the back side, that's where you can mount 2.5" SATA HDD(s).
