Hi, can I use an i7 6700 processor with an M6660G motherboard to use RAID 1?

The CPU and board are both socket LGA 1151, but the board is built for newer i7 8700 processors.  Is the board backward compatible with the i7 6700?

    Acer only lists this one processor for this computer.IC CPU.COFFEELAKE-S I7-3.7G U0. (BUY-ACER).LGA 1151P.3700MHz..6 CORES.. TDP=95W..41.6GB/S.12M..(I7-8700K).SR3QR... KC.87001.KI7.HF.LEAD-FREE.INTEL KC.87001.KI7
CPU-Upgrade doesn't even list the i7-6700 as similar to i7-8700K.

    I think no.

Why would you need to downgrade the processor to use RAID mirroring? Your motherboard only supports the 8th gen processors, but that shouldn't have anything to do with RAID...
