I'm pretty sure I know where all the connectors go the question is do I need to remove anything to access the connector plugs? And is it easy to pull this thing apart? I don't want to damage anything obviously

Not the best image, but here we go:
There are going to be a bunch of wires going from the power supply top left of the picture) and the components. One of the larger bundles goes to the MB using a 24 pin connector. That connector has a latch on it so you have to press the latch and pull at the same time, I usually rock the connector back and forth a bit while pulling. The rest of the power connectors should all be able to just be unplugged. The most likely ones you will find are the power connectors for HDD or ODD, a power connector to the GPU and likely a smaller connector on the MB. You shouldn't have to disconnect the fans since they connect to the MB, not directly to the PSU. Once you have the wires loose and out of the way there is probably a latch on the metal case just where the PSU sits on the back case, right edge of the PSU at top of the picture. You press that latch down with something like a screwdriver and slide the PSU back just a bit to allow it to get free. Slide the new one in and screw it down, then reconnect the power without forgetting any. :) The camera app on your phone is your friend here. :)

The Acer Aspire TC-886 has a nearly identical mainboard and chassis. There is a detailed video about changing the power-Supply of this machine at youtube: https://www.youtube.com/watch?v=mFCMx_V9oaM
