For some reason, I can't seem to find much reliable information on what RAM will work with this particulate model.  I found some on Crucial that says it has compatible ones, but what they do have all got bad reviews.  They sell a bunch with 0 reviews.  That makes me reluctant to buy anything from them.  My helios had factory installed 2x8.  I'm looking to put 2x16 to max it out.  Can anyone please recommend something good that I can trust? There's actually not much info on this model at when searched online. Perhaps it's because I bought it at Costco.  Anyways, I had to send in my laptop because it was overheating and had some other issues with WiFi, but after 2 weeks, it's going to be here on Monday!  If anyone can help, it would be greatly appreciated!

Crucial recommends some models for your laptop, have a look and choose according to your wish and your budged https://www.crucial.com/compatible-upgrade-for/acer/predator-ph317-51

Also forgot to ask this as well.  I've found some posts where people were able to upgrade their SSD.  I thought it was built into the motherboard?  I already upgraded the 2nd hard drive to the 2TB Seagate gaming one.  Is it possible to actually upgrade the SSD that has the operating system on it?  If so, what are your thoughts, and do you happen to know where I could find a tutorial on how to do it?

You can upgrade the m2 SSD which is sata BTW  with up to 1TB  m2 SATA SSD look at the picture below where it is located:

And this is the form factor you have to look for.

Thanks!  That's what I had found as well.  But, most of them, especially the 16gbx2 (32) don't have any reviews. There's one that has 3 stars.  Is there anything you would recommend?  I checked Amazon but there are so many different models of memory.  The crucial one that says it's compatible would be CT2K16G4SFD8266.  But, are there any others like this, or am I completely limited to using Crucial?

Nope, you are not limited to Crucial any SODIMM 2400Mhz Cl17/2666Mghz CL19 will work on your laptop.
