Acer Nitro 5 AN515-43 M.2 post-Install Issue

Hi,
My laptop came with 1TB WD HDD (Slot 0) and support for dual M.2 slots.

I recently installed Crucial M.2 NVME (Slot 2) and restored the factory image from USB, while the HDD was also connected.
It appears the restore happened on the HDD only.

So I removed the HDD and restored on the NVME this time - which turned out fine.

However, when I later added the HDD the BIOS showed me two 'Windows Boot Manager' entries in the boot order.
The top entry was for HDD, while the second one was pointing to NVME.

I changed the boot order and made NVME as the first one, booted into it and formatted the HDD.

The problem began after that...

Now if I try to boot, it starts the Diagnostics and attempts to repair Windows.

The BIOS shows only one Windows Boot Manager.

This will not go away until I disable the HDD0 slot in the BIOS - as soon as I disable all is back to normal, but I lose my 1TB drive which I intend to use as a storage drive.

Any ideas why that's happening?
