The RAM should have the same specs as the one inisde the device. The requirements that have to be met for dual channel are:
Identical module capacity of the module pair (128MB, 256MB, 512MB, 1GB, etc.)
Identical DRAM technology of the module pair (128MB, 256MB, 512MB or 1GB)
Identical DRAM bus width of the DRAMs used on the module pair (x8 or x16)
Both modules either only single-sided (1 rank) or only dual-sided (2 rank)

Always post the following characterisitcs of the device:
    -Model number
    -Part number(not required, but helpful)
    -CPU
    -GPU
    -Operating system

Helios 300 and Nitro 5 users DO NOT update the BIOS to version 1.22 if you don't want the keyboard's backlight to turn off after 30 seconds even when the device is plugged in.

Dual-channel doesn't mean the frequency will double. Dual-channel doubles the bandwidth only.
I don't know why task manager is showing 800MHz, but if CPU-Z is showing 800MHz that means 1600MHz. You can try another application HWiNFO that shows the memory frequency in real time, so if it showing 800MHz too, then the memory is running at 1600MHz. If the RAM is running at 800MHz, it would be shown as 400MHz.
In my case the RAM is 2666MHz and it is shown as 1333MHz.

DDR means double data rate, so 800x2 is 1600MHz.
