Cannot find hard drive after installing SSD.

Machine fresh out of the box. I installed an M2 SSD and the machine recognizes it. I used MiniTool partition editor to migrate Windows to the SSD. When I rebooted the machine I had Acer (C:) drive, SSD, an (F:) drive, original HD, and an ESP (E:) ? drive. At this point the machine boots to the original hard drive.
Next, in BIOS, I went to the boot options menu and changed 1st boot device from Boot Manager to UFEI: WDS WDS250 (the new SSD). I save and reboot the machine. At this point it seems to reboot on C: and it's fast, so I assume the SDD is doing the work. (Properties verifies that it's the SSD). However, In the Windows File Explorer, only the C: and E: drives are listed, no hard drive.
On the Hard Disk Priority screen, the First Boot Device is the SSD. The Second Boot Priority is Windows Boot Manager.
If I F9 and reset the defaults, it now reboots off of the old HD and all the drives show up in Windows File Explorer.
So, how can I the hard drive back when I set the SSD to boot first? What do I do with this EPS (E:) drive?
