I have my Oculus plugged in (using both usb 2, usb 3 and hdmi ports) and would like to display my screen on an external display or TV.

I tried using the remaining USB-C port assuming that would allow external display but found out that won't work.

Is there an adapter that can be used on the HDMI port (like a splitter) or any other way to do this?

There are HDMI splitter available, however unable to confirm if it would work in this scenario. Most splitter have just one HDMI input to connect a content source, though more sophisticated models with multiple inputs are also available. HDMI splitter have their own power source. Most offerings come with an AC adapter, though some can also be powered via a USB cable

While HDMI splitters cannot switch input sources by default (an HDMI switch is needed for this), there are high-end options that offer the possibility by combining both devices. Also, be aware that when sharing signals between devices with different resolutions, an HDMI splitter will automatically output a signal that matches the quality of the display with a lower resolution.
