I have an Acer Aspire 3 A315-21-95K 15.6" Notebook (AMD A9, 1TB HDD, 6GB RAM, Windows 10, AMD Radeon R5 Graphics) and bought an M.2 SSD drive hoping to be able to boot up and run programs faster from it. It's an XPG SX6000 M.2 PCIe Gen3x2 SSD. I installed it, and made sure it's seated properly, but it's not showing up in my BIOS, Device Manager or Disc Management. Is this SSD not compatible with my laptop? I even update the BIOS to v1.03 off the Acer website.

I did some research, and it seems like there's 2 types of M.2 drives, SATA III and PCIe, did I make the mistake of buying the wrong type?

You are correct in that your laptop does not support the PCIe NVME M.2 drive. You will need to purchase a the 3D NAND, SATA III M.2 version.

Just as an addition, these are the Acer OEM recommended M.2 SSD drives for your Aspire 3 A315-21-95K keep to these models as they are tested to perform the best with your laptop.
