I got the first two the wrong way round. Should be 1. I/O 2. Chipset 3. Touchpad

Have you updated your BIOS? Are you using the latest Synaptics driver from the Acer support site? On my E3 the driver is on version 18 I think.
-
You have a precision touchpad, not a fully-featured synaptics. Many threads on here complaining about that - just search for precision touchpad.
-
You have to install the drivers in the correct order. I read it here somewhere in a thread about the V5 or E5 or V3 touchpad, I think. 1. Chipset drivers 2. I/O drivers 3. Synaptics touchpad drivers I think that's correct, but have a search for the thread that mentions those drivers.

Sorry, I've not experienced the freezing problem on my E3, but I think I saw another thread about that. Have you searched? I think the V5 and E5 touchpads are the same as yours.

Many people have this 'problem', but actually it's by design. We have a 'precision' touchpad, not Synaptics. It's very limited in adjustments. If you open charms, then choose settings>change PC settings and search for touchpad, you will get the relevant page. You can reverse the two-finger scrolling direction, but not much…

Here is the answer: http://community.acer.com/t5/Notebooks-Netbooks/Aspire-E5-511-Touchpad-Driver-not-working/m-p/289798#U289798 It is by design. We have a precision touchpad, not Synaptics.

Hola Diego, many people have problems with the touchpad on E3-111 and V3-111 plus other models in the same range. See this thread: http://community.acer.com/t5/Notebooks-Netbooks/Acer-V3-111P-touchpad-doesn-t-work/m-p/279732#U279732 I don't know what the solution is, lo siento

Sounds like a hardware fault to me Are you using Win 8.1? You could try a Windows Refresh (like a reinstall but losing less of your apps and data, but you will lose customisations, I think).
-
There are several threads here about troublesome touchpads on E5, E3, V3 and other Aspire laptops with Win 8.1. No one has found the definitive solution yet, I think.
-
This may be too obvious, but have you tried toggling Fn+F7? Also, on my E3-111 the Synaptics touchpad appears under Human interface Devices in Device Manager, not under Mouse.
-
Well found, islandhopper. I think what we have is a very basic touchpad that is limited in it's features by design. Well, it's just a cheap laptop, but even my old Samsung NC10 netbook had a full-featured Synaptics touchpad with many adjustable parameters.

I have the same problem with my E3-111: http://community.acer.com/t5/Notebooks-Netbooks/E3-111-Touchpad-recognised-only-as-a-mouse/m-p/287846#U287846

Haven't done it myself, but have replaced HDDs with other HDDs. You need to make a FULL disk backup image onto a removable device like a USB HDD. You could use Macrium Reflect Free or Aomei Backupper. Then install the SSD and restore the image to it. This effectively clones the disk. Or can get a USB to SATA cable and…

I tried this E5-111 driver on my E3-111 but it didn't make any difference. The touchpad is still recognised as a normal mouse.
