How can I manually add a date for a restore beyond the last date option on list?

I stupidly uninstalled click2run which was pre-installed on my Acer. I have done all of the recovery and restore steps, but I cannot go to a date previous to the list of dates that are listed to choose from to do a restore. Does anyone know how I can manually add a date? I cannot open my very important Word and Excel documents. Very appreciative for any crumbs of advice!!
