I know there is an archived version of this same question, but the models listed in that post are no longer available in the Acer store. So what Acer touchscreen monitors use optical touch sensing?

Unfortunately, the only 2 models I see that use optical touch are the T230, T231. You are correct, that these products are no longer on the Acer store. I recommend looking online to see if you can offer someone selling those products.

Also, looking more into this issue, it seems that some stores sell capacitive gloves that may let you work on any capacitive touch monitor. Just offering options, not a specific recommendation as I am unsure of your intended use.
