Remember that comercial where the dude upgrades his internet speed, then tells his wife he just searched the whole internet? Well, I just searched the whole internest and these UEFI cards can not be found anywhere! I found one for $250 that consumes 150 watts, and another outdated HP pos card. Has anyone got a good source for a low end UEFI card for HTPC use?

Also, is there a bios update available so that most any card will work with my computer. Or is there a setting in current bios to disable UEFI, etc.???

If you are want to use a seperate video card that is ultra low power (less the 25 watts), you will have very few options. Neither AMD or nVidia are making low power cards anymore. So if you can't find a modern UEFI low power or fanless card then you can use an older model without UEFI support. What you have to do is disable fast boot in bios and enable CSM in boot options. You will lose the fast booting but thats not a big deal especially if you use sleep mode frequently. UEFI is supposed to be a little more secure for virus protection, but again if you have a good virus program and backup that should not be a problem either.
